Recipe: Gina’s Bangin Maple Granola

Ingredients

  • 255g (3/4 cup) maple syrup, room temperature
  • 65g (1/2 cup) olive oil
  • 100g (1/2 cup) dark brown sugar
  • 360g (4 cups) rolled oats
  • 120g (1 cup) hulled raw pumpkin seeds
  • 60g (1 cup) unsweetened coconut chips
  • 165g (1.5 cups) pecans / walnuts
  • 5g1/2 tsp salt
  • 2 tsp baking power
  • 1 tsp vanilla paste
  • 240g (2 cups) flour
  • 340g frozen mixed berries, room temp (yes thawed). I prefer raspberry/blueberry/blackberry mix.

Method

  1. Preheat oven to 300
  2. mix the maple syrup, oil, and brown sugar in a large bowl
  3. mix the rest of the ingredients in another
  4. mix together
  5. Bake on 300, stirring every 15 minutes. Total bake time is ~60 minutes.

NOTES:
store in a mason jar or other airtight container
