Ingredients
- 255g (3/4 cup) maple syrup, room temperature
- 65g (1/2 cup) olive oil
- 100g (1/2 cup) dark brown sugar
- 360g (4 cups) rolled oats
- 120g (1 cup) hulled raw pumpkin seeds
- 60g (1 cup) unsweetened coconut chips
- 165g (1.5 cups) pecans / walnuts
- 5g1/2 tsp salt
- 2 tsp baking power
- 1 tsp vanilla paste
- 240g (2 cups) flour
- 340g frozen mixed berries, room temp (yes thawed). I prefer raspberry/blueberry/blackberry mix.
Method
- Preheat oven to 300
- mix the maple syrup, oil, and brown sugar in a large bowl
- mix the rest of the ingredients in another
- mix together
- Bake on 300, stirring every 15 minutes. Total bake time is ~60 minutes.
