Recipe: Banana Breakfast Bites


  • 4 bananas
  • 4 tbsp chia seeds
  • 1 tsp cinnamon
  • ΒΌ tsp nutmeg
  • 2 handfuls toasted walnuts, chopped
  • 1 handful toasted pecans, chopped
  • 1 heaping handful frozen blueberries (or chocolate chips, or any other mix-in you desire)


Preheat oven to 350.
Defrost and mash bananas.
Stir in chia seeds, cinnamon, nutmeg.
Let sit for 15-30 minutes to allow chia seeds to bloom.
While waiting, toast nuts.
Chop nuts in a food processor to chop finely. These chopped nuts will serve as our binding / flour agent. If allergic to nuts, feel free to substitute oats.
Add your mix-ins at this point.
Using a tbsp cookie scoop (or just spoon), scoop onto cookie sheets.
Bake for 15 minutes to dry out the cookies and help them hold their shape. Let cool fully before eating.
