I kid you not with this title – these cookies have been getting me through 2020.
In case it’s not clear from the blog, I’m a bit of an obsessive baker. I use it as a form of stress relief, but rarely plan on eating all I bake. I used to bring all the excess into the office, to the trapeze rig, to friend’s parties, to family occasions… you get the idea. With the quarantine, that all stopped. In one of the most stressful times of our lives, I needed to bake. I gave a lot of treats to my neighbors, but my supply was starting to exceed my demand!
At the same time, I was starting to run short on supplies! I always have a back-up bag or two of flour on hand, but in this unprecedented era, I actually ran out of flour. The real problem is that I live on the upper west side (of manhattan), where flour and yeast were nowhere to be found. Strangely, my Brooklyn friends had better luck! Still no 5lbs bags, but she found a stash of 2lb bags at her local! Thus the quarantine barter was born. My dear blog editor Sara bought some flour for me in her neighborhood and sent her cyclist-avid husband on a mission! He brought me 5 adorable little bags of flour in exchange for some sourdough bread and these new creations.
Apparently, the cookies were so good that I started to get orders from other friends! The variations started and I tested out fill-in combinations on friends near and far. Thus, these cookies were my lifeline to human connection. Friends biked up, drove by, and met me in the park for their ziploc of frozen cookie dough balls. I supplied baking directions, but let me tell you, these make amazing cookie popsicles if you want to eat them straight out of the freezer!


If you want to experience the full power of the browned butter and brown sugar combination, skip the mix-ins and bake these balls of heaven!
If you plan to eat these frozen, peanut butter M&Ms are the perfect mix-in.
If you can’t find M&Ms, I’ve used Reese’s Pieces with great success. I’ve even wrapped dough around peanut butter cups!

Recipe: Quarantine Survival Cookies
2 sticks of butter 215g brown sugar 70g granulated sugar 2 eggs 2 tsp vanilla paste 1 tsp baking soda ¾ tsp kosher salt 250g all purpose flour
